Baked Winter Squash

  • 2 cups cooked winter squash (can also be frozen)
  • 1 tsp soft light margarine
  • 2 Tbsp reduced calorie pancake syrup
  • Pinch apple pie spice

Directions:

  1. Preheat oven to 350 degrees. Mix ingredients in medium-sized casserole dish. Cover and bake until hot, about 25 minutes. Serve hot with a light sprinkling of apple pie spice on top.

Broth Steamed Broccoli

  • 4 cups broccoli florets
  • 1/4 cup low-sodium broth
  • 1 tsp Italian seasoning
  • 1 Tbsp chopped green onion

Directions:

  1. Place all ingredients into a microwavable casserole dish. Cover and microwave on high until broccoli is tender, about 3 minutes.
